Cincinnatus Vineyards and Farms has Grass fed lamb available for pick up in mid May 2026 . These lambs live in open pasture and have no exposure to vaccines antibiotics and growth hormones. They are spring lambs (2025) that will be at market weight in early May (2026). They will weight 145-175 lbs when taken to the processing facility. Yield should be 60-80 lbs of meat/cuts.
Our lamb is VERY mild. We keep all lambs segregated so they don’t get all sexcited and take on more of a mutton flavor. We will harvest them at just about 1 year . Which is well before they are too mature and prevents too much flavor.
Currently we have appointments at Greenvalley meat processing mid May 2026, which should cost $115-$120 per lamb. Buyer must pay them for processing, if you want it done.
People ask :
1) What is the total cost? Price of lamb plus processing divided by yield of cuts. ($300+$120=$420) /60lbs-80lbs = $5.25-$7.00 per pound for lamb chops, leg of lamb and ground lamb etc. You will not find a better value at the store. Will send you a cut sheet that specifies your desires for processing (roasts ground stew etc…).
2) How big is a freezer lamb? About the size of a case maybe case and a half of bottled beer. You can take it out of the box and store some here some there.
3) Can I just buy meat now? Unfortunately no, you can go in with a friend(s) to split a lamb if you don’t want it all. You take what you want and you guys work it out. State and Federal law does not permit farmers to sell meat without state or federal inspection of the processing at a certified facility. Farmers can sell animals not meat (this is why you see a cow, half cow, a lamb, 1/2 lamb., so on for sale…we sell animal not meat). Certified Facilities are expensive and difficult to get into. Also this is why you pay the processing, if I pay it, then it is my animal that is turned into meat and you would then buy meat from me, which is a federal no-no.
4) Can I buy half a lamb. Sure, I can sell 1/2 lamb but it will cost more ($180) as I am then stuck with the other half. So for more savings find a friend and split it. Or get it all and have a party.
5) Do I have to have it processed? Nope. You can skip processing and come get it at your convenience. You can love it and pet it or self process yourself. If you want to process at my farm, we have to talk , it is possible but there is some more involved.
6) Can I have it Halal or kosher? Sure you’re welcome to tell me what you want and I will work with you. I don’t know how to do it and need your input.
7) Can I come see the conditions and pick my lamb out now? Yes we have the lambs in the vineyard keeping it mowed over fall winter. Please call to get directions, and to make an appointment. While here do some wine tasting, get your fresh eggs and buy wine pared for lamb dishes.
